I love making homemade salsa, usually the traditional redish tomato-onion-cilantro variety, but today we’re mixing things up with a bright green, creamy tomatillo and avocado salsa. To be perfectly honest, it looks a lot like guacamole doesn’t it? It totally does. That’s okay because it kind of tastes like a hybrid between guacamole and salsa anyway. So if you love guacamole (like my husband) and salsa (like me) then you’re in the right place. This salsamole is gonna rock your world.

And did I mention it takes less than 15 minutes to make? So easy. So delicious. So everything you want in a Mexican fiesta dip. And don’t stop with just tortilla chips, serve this stuff on ALL of your favorite Mexican dishes like tacos (I heart tacos), enchiladas (I heart those too), burritos (more heart-ing), tamale pie…. all of it.

Creamy tomaillo and avocado salsa! Perfect for serving with chips, crackers, or on top of any favorite Mexican dish like enchiladas or tacos!

Ingredients
  • 12 tomatillos, husks removed
  • 1-2 fresh jalapeños (deseeded) and chopped
  • 2 avocados
  • ½ onion, roughly chopped or diced
  • 1 bunch of cilantro, leaves only (about ½ cup packed)
  • 1 tablespoon garlic
  • 1 teaspoon salt (or to taste)
  • juice of 1 lime
  • optional: water
Instructions
  1. Add tomatillos to a pot and cover with water. Bring to a boil over medium-high heat. Boil tomatillos for about 3-5 minutes until tender. Drain and transfer tomatillos to a blender.
  2. Add all remaining ingredients (except for water) to a blender, cover and blend until smooth. Add water 1 tablespoon at a time if necessary to achieve desired consistency.
  3. Cover and chill until ready to serve with chips or your favorite Mexican dish.
